Choc Berry Protein Cheesecake

Ingredients
Base
- 100g gingernut biscuits
- 50g light spreadable butter, melted
Filling
- 60g Bulk Nutrients WPC in Chocolate
- 500g creamed cottage cheese
- 300g high-protein fat-free Greek yoghurt
- 50g cocoa
- 1x 7g sachet sugar-free raspberry jelly
- 10g gelatine powder
- 200g mixed berries (thaw if using frozen)
Topping
- 60g Froot Loops
Instructions
- Step 1: For the base, food process the biscuits and butter ingredients until combined. Press into a springform cake tin lined with foil and lightly greased.
- Step 2: Clean the food processor, then process the protein powder, cottage cheese, yoghurt and cocoa until smooth.
- Step 3: Put the jelly crystals and gelatine into a small bowl and add enough cold water to just cover. Mix into a paste with a fork, then microwave for around 20 seconds to melt. Cool slightly, then process into the filling mixture.
- Step 4: Stir through the berries, then pour filling on top of the base.
- Step 5: Refrigerate for a few hours until set, then cut into 8 to serve.
