Choc Mint Protein Bars

Ingredients
For the bars:
- 2/3 cup dedicated coconut
- 30g WPI in Chocolate
- 15g Dutch process cocoa
- 3g Stevia
- 2 teaspoons peppermint extract
- 2 tablespoons water
For the icing:
- 75g dark chocolate sugar free melts
- 1 teaspoon coconut oil
Instructions
For the bars:
- Step 1: Combine all dry ingredients in a bowl.
- Step 2: Make a well in the middle and slowly add water until the mixture clumps together.
- Step 3: Divide into three and shape into bars.
- Step 4: Freeze bars for an hour or until solid.
For the icing:
- Step 1: Melt chocolate in 30 second intervals in the microwave.
- Step 2: Add coconut oil and mix through.
- Step 3: Coat bars with chocolate and refrigerate until solid.
