High Protein, Healthy Lemon Slice

Ingredients
For the base:
- 1 scoop (30g) Protein Matrix+ in Vanilla flavour
- 150g dates
- 50g coconut - desiccated
- 150g almond meal
- 50g butter or coconut oil
- 1 teaspoon vanilla essence
- Pinch of salt
For the filling:
- 3 teaspoons (14.2g) BCAA Recovery
- 100g cashews - soaked overnight and drained
- 250ml coconut cream - thick component
- 250g cream cheese - room temperature
- Zest of 2 lemons
- Juice of 1 lemon
- Pinch of salt
- 1 teaspoon vanilla essence
Instructions
To make the base:
- Step 1: Place all base ingredients in a food processor and blend until combined. It is okay if this is a little chunky!
- Step 2: Press into a lined 8 x 8 inch baking tin and set aside.
To make the filling:
- Step 1: Place all filling ingredients in a food processor and blend well. Make sure to scrape down the sides to ensure it is fully blended.
- Step 2: Pour over the base and tap to even out the filling.
- Step 3: Place in the fridge to set. Best left overnight.
