12 Days of Christmas: Protein Lemon Slice

It's our 12 Days of Christmas celebration!

It's time to get merry and boy do we have some fun treats for you to make!

If you love a traditional Lemon Slice, then you'll be stoked with today's exclusive 12 Days of Christmas recipe!

This higher protein Lemon Slice is loaded with flavour and features our Limited Edition BCAA Recovery in fruity Pineapple flavour.

But never fear, if you didn't win any and would still like to make this, you can substitute with our Lemonade or Tropical flavour instead. Happy festive baking!


Ingredients

For the base:

  • 1 scoop (30g) Bulk Nutrients Protein Matrix+ in Vanilla flavour
  • 150g dates
  • 50g coconut - desiccated
  • 150g almond meal
  • 50g butter or coconut oil
  • 1 teaspoon vanilla essence
  • Pinch of salt

For the filling:

  • 100g cashews - soaked overnight and drained
  • 250ml coconut cream - thick component
  • 250g cream cheese - room temperature
  • Zest of 2 lemons
  • Juice of 1 lemon
  • Pinch of salt
  • 3 teaspoons (14.2g) BCAA Recovery in limited edition Pineapple flavour
  • 1 teaspoon vanilla essence

Directions

  1. To make the base: Place all base ingredients in a food processor and blend until combined. It is okay if this is a little chunky!
  2. Press into a lined 8 x 8 inch baking tin and set aside.
  3. To make the filling: Place all filling ingredients in a food processor and blend well. Make sure to scrape down the sides to ensure it is fully blended.
  4. Pour over the base and tap to even out the filling.
  5. Place in the fridge to set. Best left overnight.
