Ombré Protein Pancake Stack

Ingredients

For the pancakes:
  • 1 scoop (30g) Bulk Nutrients WPI, WPC, Thermowhey or Protein Matrix in Vanilla flavour
  • 1 cup almond flour
  • 2 eggs
  • 1/3 cup almond milk
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Food colouring in shade of your choice
  • 1 teaspoon coconut oil - melted 
For the topping:
  • 1/3 cup Greek yogurt
  • 2 tablespoons sugar free maple syrup
  • 1/2 cup blueberries
  • 2 tablespoons peanut butter

Directions

  1. Pre-heat a non-stick pan.
  2. Mix all pancake ingredients together.
  3. Pour small amount of mixture into the pan.
  4. When small bubbles appear on the top, flip pancakes and leave for another few minutes.
  5. Add half a drop of food colouring to the raw mixture and stir well. 
  6. Pour small amount of mixture into the pan.
  7. When small bubbles appear on the top, flip pancakes and leave for another few minutes.
  8. Repeat steps 5-7 with remaining mixture with each new batch becoming slightly brighter coloured.
  9. Stack in order from brighter to least bright pancakes.
  10. Sprinkle pancakes with toppings and enjoy immediately.
