Choc Peanut Muffins

Ingredients
- 100g WPI in Choc Peanut
- 130g oat flour
- 1 tsp baking soda
- 125ml water
- 125ml almond milk
- 3 tbs melted coconut oil
- 35g sugar-free brown sugar
- 60ml sugar-free maple
- 1 tsp vanilla extract
- 45g peanut butter
- 85g sugar-free choc chips
Instructions
- Step 1: Preheat oven to 180C and prepare a lined muffin tray.
- Step 2: In a bowl, sift in oat flour and baking soda, then add protein powder and mix together.
- Step 3: In a separate bowl, microwave your water and milk until warm. Then add in coconut oil, brown sugar, maple syrup and vanilla extract.
- Step 4: Whisk together.
- Step 5: Pour wet ingredients into the dry mixture then fold through the choc chips.
- Step 6: Pour mixture evenly into your muffin tin.
- Step 7: Drizzle peanut butter over each muffin.
- Step 8: Place in the oven and bake for 15-20 minutes.
