Ingredients
Base
- 60g Vanilla protein powder
- 130g Plain flour
- 40ml Skim milk
- 50g Light butter (25%) - melted
- 50g Natvia gold sweetener
- 5g Imitation vanilla
- Pinch of salt
Filling
- 10g Vanilla protein
- 150ml Lemon juice
- 180g Eggs
- 65g Plain flour
- 40g Sugar
- 60g Nativa sweetener
Instructions
Base
- Step 1: Mix protein powder, flour, skim milk, vanilla, salt, butter and sweetener in a bowl
- Step 2: Press into a lined baking tray
- Step 3: Bake for 10 - 12 mins on 180 degrees
- Step 4: Allow to cool before adding the filling
Filling
- Step 1: Whisk eggs and lemon juice together
- Step 2: Add flour protein powder, sugar and sweetener
- Step 3: Mix until combined
- Step 4: Pour over base and bake for 15 mins
