Choc Honeycomb Cupcakes

Ingredients
For the cupcake:
- 60g Thermowhey in Choc Honeycomb
- 60g Earth Protein in Chocolate
- 70g egg whites
- 50g self-raising flour
- 220g greek yoghurt
- 30g cocoa powder
- 100ml skim milk
- 10g stevia powder
- 5g baking powder
For the icing:
- 20g Thermowhey in Choc Honeycomb
- 120g greek yoghurt
- 5g powdered hot chocolate
- 30g honeycomb chocolate crumbled
Instructions
- Step 1: Preheat oven to 180 °C and grease a non-stick muffin tray.
- Step 2: Mix protein powder, cocoa, flour, baking powder and stevia in a large bowl.
- Step 3: Add yoghurt, lightly whisked egg white and skim milk, stir until combined.
- Step 4: Evenly divide the mixture into a prepared muffin tray.
- Step 5: Bake at 180 °C for 20 minutes before removing from the oven and allowing it to cool.
- Step 6: For the icing, mix protein powder, chocolate powder and cocoa in a small bowl add in yoghurt and stir until combined.
- Step 7: Spread over cool cupcakes and sprinkle crumbled choc honeycomb on top.
