Orange Poppy Seed Cake

Ingredients
For the cake:
- 120g WPI in Vanilla
- 200g egg whites
- 200g yoghurt
- 150g apple sauce
- 60g self-raising flour
- 50ml orange juice
- 15g stevia
- 10g poppy seeds
- 15g baking powder
- 5g baking soda
For the icing:
- 75g yoghurt
- 80g light cream cheese
- 25g icing sugar replacement
- Zest of an orange
Instructions
For the cake:
- Step 1: Preheat the oven to 180 degrees and prepare a lined baking tray.
- Step 2: Combine dry ingredients in a bowl and add in lightly whisked egg and yoghurt.
- Step 3: Add apple sauce, orange juice and stir until combined.
- Step 4: Pour mixture into prepared baking tray and bake for 20-25 minutes.
- Step 5: Once cooked, allow to cool completely on a wire rack.
For the icing:
- Step 1: Combine ingredients in a bowl and stir until smooth.
- Step 2: Spread over cooled cake and refrigerate to set.
