Sugar-Free Carrot Cake

Ingredients
For the cake:
- 60g Bulk Nutrients Earth Protein in Salted Caramel or Vanilla
- 30g wholemeal self-raising flour
- 90g rolled oats
- 10g baking powder
- 200g grated carrot
- 30g chopped walnuts
- 100ml unsweetened almond milk
- 2 eggs
- Cinnamon, nutmeg, ground cloves, ground ginger to taste (or use mixed spice)
- Vanilla extract to taste
For the frosting:
- 150g light cream cheese
- 30g sweetener
- 10g chopped walnuts to top
Instructions
- Step 1: Preheat oven to 180°C.
- Step 2: Combine all ingredients in a large bowl and mix well.
- Step 3: Pour into a large loaf tin lined with baking paper and bake for around 20 minutes.
- Step 4: Combine the frosting ingredients in a bowl and spread over the cooled cake.
- Step 5: Top with walnuts and enjoy.
