Mini Red Velvet Protein Puddings

Ingredients
- 1 scoop (30g) Bulk Nutrients WPI, WPC, Thermowhey or Protein Matrix in Chocolate
- 1 cup plain flour
- 1/2 cup sugar alternative - we used Natvia baking blend
- 1 teaspoon baking powder
- 2 eggs
- 150g organic butter or coconut oil - melted
- 1/2 cup milk
- 1 teaspoon vanilla essence
- 100g sugar free chocolate - chopped - we used Sweet Williams
- 1/4 cup dark cocoa
- 2 teaspoons red food colouring
Optional topping:
- 100g whipped cream cheese
- 1 teaspoon vanilla essence
- 100g raspberries
- Melted chocolate drizzle
Instructions
- Step 1: Place eggs, butter, milk, vanilla essence and food colouring in a bowl and mix well.
- Step 2: In a separate bowl, place protein powder, flour, baking powder, sugar alternative and cocoa and mix well.
- Step 3: Slowly add the wet mixture to the dry mixture and combine.
- Step 4: Pour mixture into three ramekins or small bowls.
- Step 5: Place each individually into the microwave and cook for 2 minutes. The centre should be gooey still.
- Step 6: To make the optional topping, mix the cream cheese with the vanilla essence and then spoon evenly on top of the three puddings.
- Step 7: Drizzle with melted chocolate and garnish with raspberries.
- Step 8: Best eaten immediately while still warm.
